With warmer weather just around the corner, you may find yourself looking for a refreshing treat on a sunny day! Are you in the market for a new recipe, trying to impress your friends with your culinary skills, or hosting a party that you don’t have much time to prepare for? Well, have I got the pie for you! With a rich blend of flavors, and minimal time commitment, this recipe is easy to make in a dorm kitchen, and versatile enough to serve for a variety of different occasions. What’s more, there are plenty of ways to customize it to suit your particular tastes. Berry Bliss Pie is a pie for all seasons, and guaranteed to make an impression. Read on for the recipe, and for tips and tricks to make the most of your culinary endeavors!
Ingredients for filling:
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 cup cold water
4 cups fresh berries*
*Here’s your chance to be creative! My favorite blend to use is raspberries, blackberries, and blueberries, but you can use any one of the above exclusively, or whichever combination of berries your heart desires.
Ingredients for topping (optional):
1 pint heavy whipping cream
1 cup powdered sugar
1/4 teaspoon rum flavoring
Crust:
I recommend a ready-made graham cracker crust, but it also works well in a traditional frozen pie crust. If you’re feeling extra adventurous, you can even try a chocolate graham cracker crust!
What you do:
To make your filling, blend cornstarch and water together in a small saucepan. Add in your sugar next, and mix it all together. Then you’ll add your berries, one cup at a time. Bring your mixture to a boil, and cook until filling thickens. This should take about eight minutes, and you’ll want to continue stirring as the mixture heats up! Once your filling is nice and thick, remove it from the heat, and pour it into your pie crust. Place your pie in the refrigerator to chill until set. This recipe makes approximately eight servings.
To make the topping:
Beat whipping cream with a hand mixer. Then add in powdered sugar and rum flavoring, and beat until thickened. Pour or pipe on top of the pie after the pie has set, and store in the refrigerator.
If you have access to a hand mixer, I highly recommend adding the topping for the perfect finishing touch. Between the tartness of the berries, the sweetness of the whipping cream, and the slight hint of bitterness from the rum flavoring, you’ll have just the right combination of flavors to make your Berry Bliss Pie an elegant and mouth-watering treat.
